Ingredients With Quantity
- 4 Tbsp Olive Oil
- 500G/1Lb 2Oz Beef Sirloin Steak
- 200G/7Oz Veal Rump Steak
- 1 Onion, Roughly Chopped
- 2 Carrots, Roughly Chopped
- 2 Celery Sticks, Roughly Chopped
- 2 Tbsp Tomato Puree
- 2 Bay Leaves
- 300Ml/10Fl Oz Red Wine
- 500Ml/18Fl Oz Chicken Stock
- 100G/3 3/4Oz Fresh White Breadcrumbs
- 250G/9Oz Parmesan, Finely Grated
- 1 X 1.5-2Kg/3Lb 5Oz-4Lb 8Oz Whole Chicken, Preferably Organic
- 500G/1Lb 2Oz Beef Shin
- 1 Carrot, Roughly Chopped
- 1 Onion, Roughly Chopped
- 1 Celery Stick, Roughly Chopped
- 1 Garlic Clove, Chopped
- 400G/14Oz '00' Flour, Plus Extra For Dusting
- 4 Free-Range Eggs, Beaten
- Pinch Salt
Directions
- 1. Heat the oil in a pan, then add the meat and cook for 2 3 minutes. Add the onion, carrots and celery and cook for a further 2 3 minutes. Add the tomato puree and bay leaves, cook for another 3 4 minutes, then deglaze with the wine and stock and bring to the boil. Reduce the heat and simmer for 1 hour.
- 2. Season the meatballs with salt and pepper. Mix the breadcrumbs and cheese. Shape the meat mixture into 25 60 meatballs. Dust the meatballs in flour, shaking off any excess. Dip the meatballs in the beaten eggs, letting any excess drip off, then roll in the breadcrumbs.
- 3. Place in a roasting tin, cover and cook in a pre heated 200 degrees c oven for 45 minutes, until the meatballs have browned.
