Sage Leaves Size Free-Range Eggs Plain Flour Breadcrumbs Polenta Fillets Oil

Ingredients With Quantity

  • 40 Large Sage Leaves, All Similar Size
  • 2 Free-Range Eggs, Beaten
  • 50G/1 3/4Oz Plain Flour
  • 75G/2 1/2Oz Very Fine White Breadcrumbs Or Polenta
  • 10 Anchovy Fillets, Drained
  • Vegetable Oil, For Frying

Directions

  • Place the sage in a shallow bowl.
  • Whisk together the eggs and 1 cup water.
  • Spread the flour on a plate.
  • Combine the breadcrumbs with the polenta.
  • Dip each fish fillet first in the beaten egg mixture, then in the seasoned breadcrumbs, coating both sides.
  • Heat the oil in a frying pan and fry the fish in batches for 3 5 mins on each side, until cooked through.
  • Drain on paper towels.
  • Serve with sage dressing.
