Ingredients

  • 40 Large Sage Leaves, All Similar Size
  • 2 Free-Range Eggs, Beaten
  • 50G/1 3/4Oz Plain Flour
  • 75G/2 1/2Oz Very Fine White Breadcrumbs Or Polenta
  • 10 Anchovy Fillets, Drained
  • Vegetable Oil, For Frying

Method

  1. Place the sage in a shallow bowl.
  2. Whisk together the eggs and 1 cup water.
  3. Spread the flour on a plate.
  4. Combine the breadcrumbs with the polenta.
  5. Dip each fish fillet first in the beaten egg mixture, then in the seasoned breadcrumbs, coating both sides.
  6. Heat the oil in a frying pan and fry the fish in batches for 3 5 mins on each side, until cooked through.
  7. Drain on paper towels.
  8. Serve with sage dressing.
