- 40 Large Sage Leaves, All Similar Size
- 2 Free-Range Eggs, Beaten
- 50G/1 3/4Oz Plain Flour
- 75G/2 1/2Oz Very Fine White Breadcrumbs Or Polenta
- 10 Anchovy Fillets, Drained
- Vegetable Oil, For Frying
Method
- Place the sage in a shallow bowl.
- Whisk together the eggs and 1 cup water.
- Spread the flour on a plate.
- Combine the breadcrumbs with the polenta.
- Dip each fish fillet first in the beaten egg mixture, then in the seasoned breadcrumbs, coating both sides.
- Heat the oil in a frying pan and fry the fish in batches for 3 5 mins on each side, until cooked through.
- Drain on paper towels.
- Serve with sage dressing.
