Tbsp Vegetable Oil Cumin Seeds Onion Tins Beans Water Tsp Chilli Flakes Tsp Ground Cumin Tsp Salt Rice Boiling Water Herbs Coriander Parsley Mint Sprigs Garnish

Ingredients With Quantity

  • 2 Tbsp Vegetable Or Sunflower Oil
  • 1 Tsp Cumin Seeds
  • 1 Onion, Thinly Sliced
  • 2 X 400G Tins Mixed Beans In Water, Drained And Rinsed
  • 1/2-1 Tsp Dried Chilli Flakes
  • 1 Tsp Ground Cumin
  • 1/2 Tsp Salt
  • 300G/10 1/2Oz Long-Grain Rice
  • 900Ml/1 1/2Pints Boiling Water
  • Handful Fresh Soft Herbs (Such As Coriander, Parsley Or Mint), Leaves Finely Chopped And A Few Sprigs Saved For Garnish

Directions

  • 1.
  • Preheat oven to 170 degc/160 deg c fan/gas 6.
  • 2.
  • Heat oil in heavy based pan, add in the cumin seeds, saute/fry for a few seconds till the seeds begin to pop.
  • Add in the onion, beans, salt, chilli flakes and ground cumin.
  • Simmer for 5 min stirring constantly.
  • 3.
  • Place the rice in a heatproof bowl, pour in boiling water and stir to submerge the rice.
  • Cook, covered, till the rice is tender but still hard, about 20 min.
  • Drain off the water and return the rice to the pot.
  • Stir in the herbs.
  • 4.
  • Reheat the beans and serve on individual plates with the rice.
