Skinless Chicken Breasts Cornflakes Cajun Seasoning Tsp Paprika Tsp Oregano Lemon Salt Tip Free-Range Eggs Slices Bacon Brioche Burger Buns Mayonnaise Iceberg Lettuce Tomato Pesto

Ingredients With Quantity

  • 2 Skinless Chicken Breasts
  • 70G/2 1/2Oz Cornflakes, Crushed
  • 1 Tsp Cajun Seasoning
  • 1 Tsp Paprika
  • 1 Tsp Dried Oregano
  • 1 Tsp Lemon Salt (Optional, See Recipe Tip)
  • 2 Free-Range Eggs
  • 2 Slices Bacon, Or More, To Taste
  • 2 Brioche Burger Buns
  • Light Mayonnaise
  • Iceberg Lettuce
  • Sliced Tomato
  • 2 Tsp Pesto (Optional)

Directions

  • Mix crushed cornflakes and spices in a shallow pan and set aside
  • Divide chicken into 8 portions, add one portion of chicken into each bun, roll up and secure with a toothpick.
  • Dip each stuffed bun in beaten egg, then into the cornflakes mixture.
  • Heat a large pan to medium and lay sliced bacon on one side of pan. Turn pan when bacon has cooked, then cook burgers for approximately 7 minutes or until cooked through
  • Meanwhile, brush buns with mayonnaise and toast until golden brown
  • Spread buns with pesto
  • Top with lettuce, burgers, bacon, tomato and buns and serve.
