Seared Steak With Soy A Li N Fish Fillet

Ingredients

  • 1 Postcard-Sized Piece Dried Kombu
  • 12 Dried Shiitake Mushrooms
  • 1 Garlic Clove, Peeled And Smashed
  • 1 Knob Fresh Ginger, Peeled And Finely Chopped
  • 4 Tbsp Soy Sauce
  • 4 Tbsp Mirin
  • 2 Tsp Caster Sugar
  • Salt
  • 150G/5 1/2Oz Salted Butter
  • 3 Anchovy Fillets, Chopped
  • 2 Tbsp Chopped Curly Leaf Parsley
  • 2 Tbsp Chopped Fresh Or Rehydrated Mixed Coloured Seaweed (See Recipe Tip)
  • Dash Oil
  • 2 X 300G/10 1/2Oz Beef Fillet Steaks
  • 100G/3 1/2Oz Mixed Oriental Mushrooms, Cleaned
  • 2 Tbsp Baby Or Micro Watercress Leaves, To Garnish
  • 1 Tbsp Fresh Or Rehydrated Mixed Coloured Seaweed, To Garnish (See Recipe Tip)

Method

  1. Place kombu, mushrooms, clove, ginger, soy sauce, mirin and sugar in a small pan, add water to almost cover, bring to boil, simmer for 2 minutes, remove from heat and cool.
  2. Pour out mushroom liquid into a saucepan, add the salt and bring to boil.
  3. Simmer uncovered until sauce has thickened slightly, approximately 10 minutes.
  4. Transfer to a medium bowl and set aside.
  5. Melt butter in a frying pan.
  6. Working in 2 batches, add beef fillets and cook over high heat until just browned, about 4 minutes on each side.
  7. Transfer to a serving platter.
  8. Wipe out pan, return to heat and add butter.
  9. When the butter is melted, add parsley.
  10. Return beef to pan and spoon over sauce.
  11. For steak, combine 1 tbsp seaweed with oil and gently stir to combine.
  12. Heat a lightly oiled non stick frying pan until very hot and add the sliced mushrooms.
  13. Cook until golden brown and tender, about 4 minutes, turning.
  14. Pour over steak and serve.
