Ingredients
- 2 Star Anise
- 4 Cloves
- 2 Tbsp Coriander Seeds
- 1 Large Onion, Unpeeled, Halved
- 1 Large Thumb-Sized Piece Fresh Root Ginger, Unpeeled And Halved
- 1.5 Litres/2 3/4 Pints Beef Stock
- 1 Bone Marrow, Cleaned
- 3 Tbsp Fish Sauce
- 250G/9Oz Flat Rice Noodles
- 400G/14Oz Best-Quality Sirloin Steak, Fat Removed, Very Thinly Sliced
- Large Handful Beansprouts
- 3 Spring Onions, Thinly Sliced
- 1 Red Chilli, Thinly Sliced
- Small Handful Mint Leaves
- Small Handful Basil Leaves
- Small Handful Coriander Leaves
- 2 Limes, Quartered
Method
- Combine the star anise, cloves, coriander seeds, onion and ginger in a mortar and pestle and crush to a paste. Heat the stock in a large saucepan and cook the paste for 3 4 minutes.
- Add the marrow bone to the simmering stock and cook for 5 minutes. Add the fish sauce and 3 1/2 cups of the simmering stock and simmer for 1 hour.
- Meanwhile, cook the rice noodles in boiling water for about 1 minute. Drain and rinse under cold water. Set aside.
- In a pan, cook the beef in a little of the simmering stock, a few pieces at a time, until cooked through. Drain the beef and set aside. Heat the remaining stock and add the noodles.
- When the marrow bone has begun to rise to the surface, add the beansprouts and saute for 30 seconds.
- Season with salt and pepper and divide amongst 2 bowls. Top with the spring onions, chilli, herbs and beef. Serve with a squeeze of lime.
