Ingredients

  • 400G/14Oz Beef Mince
  • 400G/14Oz Pork Mince
  • 1 Free-Range Egg, Beaten
  • 3 Garlic Cloves, Finely Chopped Or Grated
  • Small Handful Fresh Flatleaf Parsley, Chopped
  • 1/2 Tsp Ground Cinnamon
  • 1 Tsp Piment D’Espelette Or Pimenton
  • 2-3 Tbsp Plain Flour, Plus Extra For Rolling
  • 3 Tbsp Olive Oil
  • Salt And Freshly Ground Black Pepper
  • 1 Tbsp Olive Oil
  • 1 Onion, Finely Chopped
  • 100G/3 1/2Oz Unsmoked Bacon Lardons Or Cubes Of Cooked Ham
  • 1 Tsp Piment D’Espelette Or Pimenton
  • 1/2 Tsp Ground Cinnamon
  • 6 Tomatoes, Cored And Roughly Chopped
  • 1 Tbsp Tomato Puree
  • 150G/5 1/2Oz Pitted Green Olives, Drained
  • 400G Tin Haricot Beans, Drained And Rinsed
  • Salt And Freshly Ground Black Pepper
  • Freshly Cooked Rice, To Serve (Optional)

Method

  1. Mix the meatball ingredients together with your hands to form small balls.
  2. In a big frying pan heat the oil and fry the meatballs for 10 minutes.
  3. Drain off the excess fat.
  4. Meanwhile prepare the tomato sauce heat the oil and cook the onions until tender.
  5. Stir in the ham, piment d espelette pimenton and cinnamon.
  6. Cook for 1 minute.
  7. Stir in the chopped tomatoes, tomato puree, olives and haricot beans.
  8. Add salt and pepper to taste.
  9. Cook for 10 minutes.
  10. Remove from heat and keep warm until needed.
  11. To serve, bring a large pan of lightly salted water to the boil.
  12. Add the rice and cook for 3 minutes.
  13. Drain.
  14. To serve, slice the meatballs in half.
  15. Arrange rice on a serving plate and top with the bean and tomato sauce.
