Ingredients
- 400G/14Oz Beef Mince
- 400G/14Oz Pork Mince
- 1 Free-Range Egg, Beaten
- 3 Garlic Cloves, Finely Chopped Or Grated
- Small Handful Fresh Flatleaf Parsley, Chopped
- 1/2 Tsp Ground Cinnamon
- 1 Tsp Piment D’Espelette Or Pimenton
- 2-3 Tbsp Plain Flour, Plus Extra For Rolling
- 3 Tbsp Olive Oil
- Salt And Freshly Ground Black Pepper
- 1 Tbsp Olive Oil
- 1 Onion, Finely Chopped
- 100G/3 1/2Oz Unsmoked Bacon Lardons Or Cubes Of Cooked Ham
- 1 Tsp Piment D’Espelette Or Pimenton
- 1/2 Tsp Ground Cinnamon
- 6 Tomatoes, Cored And Roughly Chopped
- 1 Tbsp Tomato Puree
- 150G/5 1/2Oz Pitted Green Olives, Drained
- 400G Tin Haricot Beans, Drained And Rinsed
- Salt And Freshly Ground Black Pepper
- Freshly Cooked Rice, To Serve (Optional)
Method
- Mix the meatball ingredients together with your hands to form small balls.
- In a big frying pan heat the oil and fry the meatballs for 10 minutes.
- Drain off the excess fat.
- Meanwhile prepare the tomato sauce heat the oil and cook the onions until tender.
- Stir in the ham, piment d espelette pimenton and cinnamon.
- Cook for 1 minute.
- Stir in the chopped tomatoes, tomato puree, olives and haricot beans.
- Add salt and pepper to taste.
- Cook for 10 minutes.
- Remove from heat and keep warm until needed.
- To serve, bring a large pan of lightly salted water to the boil.
- Add the rice and cook for 3 minutes.
- Drain.
- To serve, slice the meatballs in half.
- Arrange rice on a serving plate and top with the bean and tomato sauce.
