Ingredients
- 2 Skinless Chicken Breasts
- 70G/2 1/2Oz Cornflakes, Crushed
- 1 Tsp Cajun Seasoning
- 1 Tsp Paprika
- 1 Tsp Dried Oregano
- 1 Tsp Lemon Salt (Optional, See Recipe Tip)
- 2 Free-Range Eggs
- 2 Slices Bacon, Or More, To Taste
- 2 Brioche Burger Buns
- Light Mayonnaise
- Iceberg Lettuce
- Sliced Tomato
- 2 Tsp Pesto (Optional)
Method
- Mix crushed cornflakes and spices in a shallow pan and set aside
- Divide chicken into 8 portions, add one portion of chicken into each bun, roll up and secure with a toothpick.
- Dip each stuffed bun in beaten egg, then into the cornflakes mixture.
- Heat a large pan to medium and lay sliced bacon on one side of pan. Turn pan when bacon has cooked, then cook burgers for approximately 7 minutes or until cooked through
- Meanwhile, brush buns with mayonnaise and toast until golden brown
- Spread buns with pesto
- Top with lettuce, burgers, bacon, tomato and buns and serve.
