Ingredients

  • 30G/1Oz Unsalted Butter
  • 1 Onion, Finely Chopped
  • 1 Green Eating Apple, Finely Chopped
  • 2-3 Tsp Curry Powder
  • 1 Tbsp Plain Flour
  • 350Ml/12Fl Oz Chicken Stock
  • 1/2 Leftover Roast Chicken, Torn Into Pieces
  • Splash Double Cream
  • 1 Squeeze Lemon Juice
  • 2 Tbsp Sultanas
  • 2 Tbsp Toasted Almonds
  • Salt And Freshly Ground Black Pepper
  • Freshly Cooked Basmati Rice, To Serve

Method

    1. Melt butter and saute onion and apple over medium heat for 5 min. Sprinkle with curry powder and cook for 1 min. Sprinkle in flour, stir and cook for 30 seconds.
    1. Gradually add stock, stirring over low heat until thickened.
    1. Add chicken and simmer for 15 min.
    1. Add cream and lemon juice and simmer for a further 5 min.
    1. Toss in sultanas and almonds. Season.
    1. Serve with cooked rice
