Ingredients

  • 175G/6Oz Salmon Fillet
  • Sea Salt And Freshly Ground Black Pepper
  • 1 Tsp Olive Oil
  • 1 Tbsp Balsamic Vinegar
  • 1 Tsp Honey
  • 1-2 Sesame Seeds
  • 1 Tbsp Olive Oil
  • Large Handful Of Spinach
  • 1/2 400G/14Oz Can Cherry Tomatoes
  • 1/2 Tsp Dried Chilli Flakes

Method

  1. To make dressing mix oil, vinegar, honey, sesame seeds, garlic powder, fresh ground pepper, 1/2 cup of the olive oil.
  2. To assemble salad. Wash spinach and dry.
  3. Slice cherry tomatoes
  4. Heat grill pan to med heat
  5. Spray with olive oil
  6. Add spinach and stir fry until wilted
  7. Plate lettuce
  8. Arrange browned fish fillet over top
  9. Drizzle with dressing
