Ingredients
- 2 Tbsp Vegetable Or Sunflower Oil
- 1 Tsp Cumin Seeds
- 1 Onion, Thinly Sliced
- 2 X 400G Tins Mixed Beans In Water, Drained And Rinsed
- 1/2-1 Tsp Dried Chilli Flakes
- 1 Tsp Ground Cumin
- 1/2 Tsp Salt
- 300G/10 1/2Oz Long-Grain Rice
- 900Ml/1 1/2Pints Boiling Water
- Handful Fresh Soft Herbs (Such As Coriander, Parsley Or Mint), Leaves Finely Chopped And A Few Sprigs Saved For Garnish
Method
- 1.
- Preheat oven to 170 degc/160 deg c fan/gas 6.
- 2.
- Heat oil in heavy based pan, add in the cumin seeds, saute/fry for a few seconds till the seeds begin to pop.
- Add in the onion, beans, salt, chilli flakes and ground cumin.
- Simmer for 5 min stirring constantly.
- 3.
- Place the rice in a heatproof bowl, pour in boiling water and stir to submerge the rice.
- Cook, covered, till the rice is tender but still hard, about 20 min.
- Drain off the water and return the rice to the pot.
- Stir in the herbs.
- 4.
- Reheat the beans and serve on individual plates with the rice.
