Aarsis Rice With Beans Recipe

Ingredients

  • 2 Tbsp Vegetable Or Sunflower Oil
  • 1 Tsp Cumin Seeds
  • 1 Onion, Thinly Sliced
  • 2 X 400G Tins Mixed Beans In Water, Drained And Rinsed
  • 1/2-1 Tsp Dried Chilli Flakes
  • 1 Tsp Ground Cumin
  • 1/2 Tsp Salt
  • 300G/10 1/2Oz Long-Grain Rice
  • 900Ml/1 1/2Pints Boiling Water
  • Handful Fresh Soft Herbs (Such As Coriander, Parsley Or Mint), Leaves Finely Chopped And A Few Sprigs Saved For Garnish

Method

  2. Preheat oven to 170 degc/160 deg c fan/gas 6.
  3. 2.
  4. Heat oil in heavy based pan, add in the cumin seeds, saute/fry for a few seconds till the seeds begin to pop.
  5. Add in the onion, beans, salt, chilli flakes and ground cumin.
  6. Simmer for 5 min stirring constantly.
  7. 3.
  8. Place the rice in a heatproof bowl, pour in boiling water and stir to submerge the rice.
  9. Cook, covered, till the rice is tender but still hard, about 20 min.
  10. Drain off the water and return the rice to the pot.
  11. Stir in the herbs.
  12. 4.
  13. Reheat the beans and serve on individual plates with the rice.
