Bacon And Bean Soup

Ingredients

  • 60G/2 1/2 Canned Borlotti Beans, Drained And Rinsed
  • 1 Celery Stalk, Trimmed, Chopped
  • 1 Spring Onion, Trimmed, Sliced
  • 50G/2Oz Cooked Bacon, Chopped
  • 1 Garlic Clove, Peeled And Crushed
  • Pinch Dried Chilli Flakes
  • 25G/1Oz Tomato Puree
  • Pinch Stock Or Bouillon Powder
  • 250Ml/9Fl Oz Water

Method

  1. Soak beans in a bowl of water for 15 min.
  2. Drain beans and add to a pot.
  3. Add 150 ml of water.
  4. Add bouillon powder, water, tomato paste, chilli, garlic, tomatoes, celery, spring onion, bacon and salt.
  5. Bring to the boil and boil for 2 hours.
  6. Do not add salt.
  7. Add water if you need it.
  8. Strain and return to the pot.
  9. Serve with hot bread and a glass of white wine.
