Ingredients With Quantity
- 30G/1Oz Unsalted Butter
- 1 Onion, Finely Chopped
- 1 Green Eating Apple, Finely Chopped
- 2-3 Tsp Curry Powder
- 1 Tbsp Plain Flour
- 350Ml/12Fl Oz Chicken Stock
- 1/2 Leftover Roast Chicken, Torn Into Pieces
- Splash Double Cream
- 1 Squeeze Lemon Juice
- 2 Tbsp Sultanas
- 2 Tbsp Toasted Almonds
- Salt And Freshly Ground Black Pepper
- Freshly Cooked Basmati Rice, To Serve
Directions
- 1. Melt butter and saute onion and apple over medium heat for 5 min. Sprinkle with curry powder and cook for 1 min. Sprinkle in flour, stir and cook for 30 seconds.
- 2. Gradually add stock, stirring over low heat until thickened.
- 3. Add chicken and simmer for 15 min.
- 4. Add cream and lemon juice and simmer for a further 5 min.
- 5. Toss in sultanas and almonds. Season.
- 6. Serve with cooked rice
