  • 2 Tbsp Caster Sugar
  • 1/2 Tsp Fine Sea Salt

  • 250G/9Oz Plain Flour, Plus Extra For Kneading And Rolling
  • 1/2 Heaped Tsp Fine Sea Salt
  • 1 Tbsp Olive Oil
  • 2 Tbsp Rapeseed Oil
  • 1 Red Onion, Finely Chopped
  • 1 Red Pepper, Seeds Removed, Diced
  • 1 Green Pepper, Seeds Removed, Diced
  • 4 Garlic Cloves, Crushed
  • 2 Tsp Paprika
  • 2 Tsp Ground Cumin
  • Pinch Dried Chilli Flakes
  • 1 1/2 Tbsp Dried Oregano
  • 500G/1Lb 2Oz Minced Beef
  • 500Ml/18Fl Oz Beef Stock
  • 4 Large Tomatoes, Diced
  • 1/2 Red Onion, Finely Chopped
  • 1 Green Chilli, Preferable Jalapeno Or Serrano, Finely Chopped
  • 1 Garlic Clove, Finely Grated
  • 2 Tbsp Lime Juice
  • 1/2 Small Bunch Fresh Coriander, Finely Chopped
  • 1/2 Tsp Fine Sea Salt
  • Freshly Ground Black Pepper
  • 2 X 400G/14Oz Cans Black Beans, Drained And Rinsed
  • 2 Tbsp Olive Oil
  • 1 Small Red Onion, Finely Chopped
  • 2 Garlic Cloves, Crushed
  • 1 Tbsp Smoked Paprika
  • 1 Tbsp Ground Cumin
  • 1/2 Tsp Hot Chilli Powder
  • 2 Tbsp Lime Juice
  • 1 Tbsp Runny Honey
  • 1 Tsp Flaked Sea Salt, Plus Extra To Taste
  • 2 Ripe Avocados, Halved, Stoned, Peeled And Roughly Mashed Or Chopped
  • 1 Tomato, Finely Diced
  • 1/2 Red Onion, Finely Chopped
  • 1 Green Chilli, Preferable Jalapeno, Finely Chopped
  • 1/2 Small Bunch Fresh Coriander, Finely Chopped
  • 1 Lime, Juice Only
  • Pinch Salt
  • Pinch Dried Chilli Flakes (Optional)

Method

  1. To make the marinade place the vinegar, sugar and salt into a small pan and stir over low heat until the sugar dissolves. Pour over the onion and set aside in a glass bowl in the fridge for a couple of hours.
  2. For the tortillas combine flour and sea salt into a bowl and mix well. Add oil and use your hands to mix all ingredients together.
